Is Food Culture a study area per se, is it something ethnologists are supposed to study or is Food Culture a construction of patterns that emerge in the researchers analysis of the empirical material?
This article is about how food ethnologists have been using the concept of food culture more as a given unity than as a result of a human processes. In comparison to this the article stresses contemporary food preconditions and how they, together with cultural theory about representation, discourses and reflexivity, influences a new understanding of the relation between food and culture. The conclusion of the text is that ethnological food research of today needs to discuss what is really meant with Food Culture and how the usage of the concept effects the results of the research.
